Бернхард Бауман, владелец кафе Das Schindler, открытом на месте старого кафе «У Шиндлеров», любезно разрешил мне поделиться рецептом торта «Захер» от своего шефа.

Ингредиенты

Для коржа

180 г муки

200 г абрикосового джема

180 г темного шоколада

180 г сливочного масла

150 г сахарной пудры

150 г сахарного песка

6 яичных желтков

6 яичных белков

Для шоколадной глазури

220 г темного шоколада

250 г сахарного песка

180 мл воды

Способ приготовления

Взбить размягченное сливочное масло с сахарным песком. По одному добавить яичные желтки, затем растопленный шоколад. Взбить белки с сахарным песком в твердую пену, осторожно перемешать с шоколадной смесью. Просеять в смесь муку и осторожно перемешать. Выложить тесто в форму диаметром 25 см и выпекать 40–50 минут при 180 °C. Охладить до 50 °C, выложить на стол и разрезать на три коржа. Промазать каждый абрикосовым джемом и положить друг на друга. Для изготовления шоколадной глазури смешать все ингредиенты и хорошо прогреть. Покрыть торт глазурью и подавать со взбитыми сливками.
